Menu Plan Monday - Why I Plan to Eat Out - September 29th - October 3rd, 2014

What an amazing Summer Fall weekend we just had; ours was a busy one.  Jon was busy with Laurier University Homecoming Weekend while our Little One started ballet lessons Saturday morning, throw in there a birthday party and some apple picking and busy we were.

Sometimes busy just sneaks up on you, when you are not even looking BOOM there it is.  It's 6:30pm and you are finally making it home (late of course) thanks to the traffic jam/late conference call/child meltdown, who knows what really made you late, but you are late, frazzled and hangry (yes that is hungry and angry combined).  Who really wants to make dinner on a day like that?


This is exactly why I ALWAYS give my family "permission" to eat out once a week.  This eat out day is typically planned for Friday because face it that is usually the day you just don't want to cook, but we allow flexibility on this one.  If Tuesday is suddenly a terrible, horrible, no good, very bad day then I say eat out and just push your planned dinners ahead a day.

Beer Nuts

Today I thought I would share with you a little snack.


I made these Beer Nuts for mine and Jon's Dads for this past Father's Day and they were met with much enthusiasm.


Both asked for more (they are still waiting) and my Mom even tried her hand at making them and was pleased with how easy they were.


I wrapped them up all pretty in a mason jar and our Little One decorated a Salt Dough snack bowl I made to give along with it.

It made the perfect Father's Day gift, but the nuts alone make a great snack and looking forward to the holiday season these would make excellent hostess gifts.

Weeknight Turkey Dinner

I am coming at you today with two recipes.  That's right, TWO recipes.


One recipe is for a juicy slow cooked turkey breast.


And the other is a quick and simple stuffing made with couscous.


I serve both with a green veggie of choice; my family usually chooses broccoli. I also whip up a quick gravy (READ: I make a packaged turkey gravy and add the slow cooker juices).

How does turkey dinner in 30 minutes sound????  Perfect for a weeknight meal or a low key Thanksgiving gathering.

Oven Roasted Chicken Wings

Currently my Little One is in LOVE with Chicken Wings.  In fact when she asks for more she does this cute little wing flap with her arms which her Dad and I LOVE.


 She was anxiously awaiting this super easy and quick weeknight dinner and getting quite annoyed that Mommy kept taking photos instead of letting here eat.  Oh the life of a child of a #foodblogger.


Like I said these wings are quick (ready in under an hour) and super tasty and pair well with a store bought salad or freezer fries for a yummy #weeknight meal.


The only dishes you dirty are a mixing bowl and baking sheet (which I recommend covering with foil for easy clean up).


I made two pounds of wings for our family of three.  The wings I got from Dutchies here is Waterloo were HUGE so this was more then enough.  If your family needs more I would say double the recipe for every two pound of wings you add.

Oatmeal White Chocolate Cranberry Cookies

As the colder weather approaches my thoughts start to turn to comfort food and high on my comfort food list is baked goods.  In the summer months cakes, cookies, squares etc. are not commonly found in my kitchen, but once the temperature starts to drop baked goods I am craving.


I've said it before and I'll probably say it a million times more; I am NOT a baker, but this Oatmeal Cookie recipe is super easy and forgiving.  I decided to add the white chocolate, cranberries and almonds and I am sure you can add in whatever you would like to this base recipe.  Best of all these cookies freeze really well.  I simply roll the raw dough into balls and place on a cookie sheet in the freezer, once frozen I place dough balls in a freezer bag.  When I am feeling like a little fresh baked treat I simply remove one, two or ten from the freezer, let them defrost and bake.


As the days cool it is always nice to curl up with a good book, a roaring fire, a hot tea or cold glass of milk and a yummy plate of cookies.  My Oatmeal White Chocolate Cranberry Cookies are a perfect match.
